A Big Buzz in Food Safety - Edible Insects

Insect consumption by humans is gaining more and more traction (Brood X Cicadas, anyone?), and food safety questions arise around edible insects. The Food and Agriculture Organization of the United Nations, FAO, published a guide for the “Looking at edible insects from a food safety perspective“. We may be on the threshold for an entire new source of proteins in the Western world, expressed in new business opportunities, including insect farming.
