Food allergens are an important aspect of food safety. Approximately two to three percent of the population is affected by allergies to food components. Since no cure is yet possible, those affected must avoid foods containing allergens that are dangerous to them. One of the main problems is that undeclared additives may be contained in the food. For this reason, EU Regulation 1169/2011 was introduced.
FoodChain ID Testing helps you meet these regulatory requirements by supporting your risk management with accurate ELISA and PCR-based analytical methods.
These analyses verify the allergen status of an end product or the raw materials used and are extremely helpful in verifying in-house HACCP concepts.
Depending on the allergen, up to two analytical methods are possible:
- ELISA (Enzyme-linked Immunosorbent Assay) is a highly sensitive antibody-based method and allows exact quantification of the allergen.
- PCR (Polymerase Chain Reaction) is a DNA-based method and detects the DNA of the allergenic component.
In principle, both methods are highly specific and highly sensitive. However, depending on the allergen, one method may be more suitable than the other, for example in terms of sensitivity or specificity, or only one of the two methods may be available for the parameter in question.
